Following my dreams in Spring, meant getting pregnant and giving birth to Faeryn Rose. Now that she’s older, we regularly eat fish for dinner and these fish and herb parcels are one of my go-to’s.
It’s important for me to provide a healthy meal for my loved ones and fish is one if the favourite dishes. It’s full of healthy omega oils for brain food and protein for muscle growth, and very low in fat. 

Steaming fish has to be one of the most healthy ways to prepare it. A parcel of freshly steamed fish, served with a salad and crusty bread is such a great, light meal during the warmer months.

I like to serve these fish parcels with asparagus when it’s in season. They both match well with little drizzled butter!

Fish and Herb Parcels

We enjoy this over and over again during Summer!

Ingredients

  • 1 fillet fish per person not too large, say 120grams
  • 3 slices lemon per fillet
  • Fresh herbs chopped any mix of tarragon, parsley, dill, chives, etc
  • Crushed garlic
  • Salt and pepper to taste
  • Baking paper to wrap fish in a parcel (If doing it in the oven)
  • Tin foil to wrap fish in a parcel (if doing it on the BBQ)

Instructions

  1. Put fish in the middle of baking paper or tin foil.
  2. Place lemon slices on top of fillet.
  3. Sprinkle herbs and a little garlic on top.
  4. Season with a good crack of sea salt and black pepper, then wrap the fish like a little parcel.
  5. If baking in oven, bake for around 12-15 minutes at 180, with the fold side down. If cooking on the BBQ, cook on the grill over low flame, but with the hood shut - again around 12-15 minutes should be perfect!
