Preheat the oven to 220C and prepare a baking tray by dusting with a little flour, or greasing with a little butter.

In a large bowl, sift together the flour, baking powder, salt and smoked paprika (if using). Cut the butter into small cubes, and rub through the flour until you have the consistency of breadcrumbs.

Stir through the tasty cheese, reserving a little for sprinkling on top of the scones.

Make a well in the middle of the bowl and pour in the milk. Using a long, blunt knife quickly mix the milk with the dry ingredients until combined.

Turn out onto the lightly floured baking tray and shape into a 2cm thick rectangle. With the long knife, cut into 6-9 even-sized scones, depending on how large you like your scones.

Sprinkle over the reserved cheese, and a pinch more of smoked paprika (if using).

Bake for 12-15 minutes, until the scones are golden.
