Caribbean Marinade for chicken or pork

If you like a fiery barbecue marinade, then you need this recipe in your life! The amount (and type) of chilli you use is up to you depending on how fiery you want it to be (if not at all, you can still make it with a mild chilli or two and the seeds taken out). It makes incredibly tasty barbecued chicken thighs, amazing served with mango salsa. But you can use it to marinade anything from fish to vegetables to pork or steak.

Ingredients

  • 3-4 Sprin Onions Chopped
  • 3 tbsp Thyme Leaves Chopped
  • 2.5cm Freash Ginger Peeled and chopped
  • 4 Coves Garlic Chopped
  • 1 tbsp Ground Allspice
  • 2 tbsp Brown Sugar
  • 2 Limes Use the juice of limes or lemons
  • 1 tbsp Tomato Paste
  • 1 tbsp Soy Sauce
  • 3-4 tbsp Oil
  • 2 large Chillies Chopped
  • 1 tsp Salt

Instructions

  1. Blend all ingredients together in a food processor or blender until well combined. Use to marinate meat and chicken, as in the recipes below.

    Storage

    The marinade will keep for up to 2 weeks in the fridge or can be frozen for months.
