This is a great last-minute dinner when you have only a few minutes and have run out of energy and inspiration. As long as you have a bag of corn chips and a tin of kidney beans in the cupboard, you’re away!
Place all Nacho spice mix ingredients in a small lidded jar and shake thoroughly. Keep this as a stock mixture and use as required in the following recipe.
Fry the mince, onion and garlic in a little oil in a large frypan, until the mince is browned and all the water has evaporated
Add the salt, pepper and nacho spice mix and stir well over medium heat for about a minute Turn the heat to low and add the drained beans.
Stir gently for 2 to 3 minutes to heat through. Add tomato sauce as desired to moisten the mix and add flavour.
Serve with plain corn chips and a salad topped with guacamole or sour cream and grated cheese.
