Stained glass window cookies

Lollies and biscuits combined: what child would say no? I used lollipops for these and it worked brilliantly, just hit them with a hammer and the sticks slide out then cut the hole slightly bigger than the lolly – you can just pour the crushed candy straight in. Perfect!

Ingredients

  • 110 g butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tablespoon golden syrup
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 2 cups flour
  • 3/4 teaspoon baking powder
  • 10 Lollipops

Instructions

  1. Pre-heat oven to 180 degrees Celsius. Line two baking trays with baking paper.
  2. In a large bowl, cream together butter and sugars until fluffy. Add golden syrup and vanilla extract, mixing until incorporated. 

  3. Add egg and mix until light and smooth.

  4. Sift together flour and baking powder. Fold dry ingredients into wet mixture. Wrap in plastic wrap and refrigerate at least an hour and up to 2 days.
  5. Smash lollipops and remove sticks.
  6. Roll dough to half cm thick. Use cookie cutters to cut dough into desired shapes. Transfer cookies to prepared baking sheets, about 2cm apart. 

  7. Cut out centre of cookies with a smaller cutter.

  8. Sprinkle the crushed lollipops into the hollowed-out centers of the cookies, filling to the edges. Try to keep the candy within the centers. Any candy specks that fall on the cookie will color the cookie.
  9. Bake 9 to 10 minutes. The lollies should be melted and bubbling and the cookies just barely beginning to brown. 

  10. Remove baking trays from oven and place on wire racks to cool. Allow cookies to cool on trays at least 10 minutes; otherwise, the candy centers may separate from the dough. When cookies are completely cooled, remove and store in an airtight container. Yum!
