Secret Chocolate Cake with Berry Jam

Best Ever Chocolate Cake Recipe (with Berry Jam!)

Ingredients

Chocolate Cake

  • 125 g butter
  • ¾ cup of sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/3 cup dark berry jam
  • 1 ¼ cups flour
  • 1 tsp baking powder
  • ½ cup cocoa
  • 1 tsp baking soda
  • 1 cup milk (warmed)
  • ½ cup chocolate pieces (optional)

Icing

  • 2 cups icing sugar
  • 4 tbsp cocoa
  • 50 g melted butter

Instructions

Chocolate Cake

  1. Preheat oven to 180 degrees and grease a 22cm round cake tin
  2. Beat together butter and sugar until light and creamy
  3. Add eggs one at a time beating well after each addition
  4. Beat in vanilla essence and jam
  5. Sift together flour, baking powder and cocoa in separate bowl
  6. Stir baking soda into warm milk
  7. Fold dry ingredients and milk alternately into creamed mixture
  8. Fold in chocolate chips if desired
  9. Bake for approx 45 minutes or until an inserted skewer comes out clean.

Icing

  1. Mix the icing ingredients until smooth adding hot water if required to reach a smooth consistency
  2. Once cool lather the cake with a generous layer of icing.
