kid friendly curried sausages

Kid Friendly Curried Sausages

This is delicious and makes lots – it will store safely in the fridge for two or three days and can be easily reheated in the microwave.

Ingredients

  • 25 g butter
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp Vencat mild curry powder
  • 10 – 12 gluten free sausages Hellers are very nice
  • 1 large onion chopped
  • 2 medium to large kumara peeled and chopped into 2-3cm cubes
  • 1 400 g can Italian-style tomatoes
  • 1 cup home-made tomato sauce
  • 1 400 g can coconut cream
  • 1 handful each of frozen peas and corn
  • 2 apples peeled, cored and chopped into 2cm cubes
  • 2 tbsp sultanas
  • Salt and pepper to taste

Instructions

  1. In a large electric frying pan, place the butter, with the spices on top of it.
  2. Heat so that the spices mix in as the butter melts. Cook for a minute or so to develop the spice flavours.
  3. Add the sausages and roll the around in the butter and spice mix.
  4. Add the onions and kumara and stir through to coat with the spice mix. Cook for a few minutes, stirring regularly, until the sausages brown a little.
  5. Add the tin of tomatoes and the tomato sauce and mix well. Stir through the coconut cream.

  6. Add in the frozen peas and corn, and add the cubed apple and the sultanas, mix well.

  7. Cover and cook on low to medium heat for about an hour. Try to maintain a gentle simmer throughout.
  8. If needed, thicken with a very small amount of cornflour in water. Usually the mix thickens itself adequately during the cooking process.

Recipe Notes

Serve with baked potatoes, or rice, and a salad or cooked veges of your choice.
