Lollies and biscuits combined: what child would say no? I used lollipops for these and it worked brilliantly, just hit them with a hammer and the sticks slide out then cut the hole slightly bigger than the lolly – you can just pour the crushed candy straight in. Perfect!
In a large bowl, cream together butter and sugars until fluffy. Add golden syrup and vanilla extract, mixing until incorporated.
Add egg and mix until light and smooth.
Roll dough to half cm thick. Use cookie cutters to cut dough into desired shapes. Transfer cookies to prepared baking sheets, about 2cm apart.
Cut out centre of cookies with a smaller cutter.
Bake 9 to 10 minutes. The lollies should be melted and bubbling and the cookies just barely beginning to brown.
Remove baking trays from oven and place on wire racks to cool. Allow cookies to cool on trays at least 10 minutes; otherwise, the candy centers may separate from the dough. When cookies are completely cooled, remove and store in an airtight container. Yum!
