San Choy Bau

Ingredients

  • 1 tablespoon sesame oil
  • 1 clove garlic crushed
  • 1 teaspoon chopped ginger
  • 500 g pork mince
  • 250 g chicken mince
  • 1/2 green capsicum chopped
  • 1 red capsicum chopped
  • 1 carrot finely diced
  • 1 cup long grain rice
  • 2 tablespoons soy sauce
  • 1 bunch spring onions sliced
  • lettuce leaves to serve

Instructions

  1. Pre-heat a large non-stick frying pan or wok. Add oil, garlic, ginger and minces and fry until brown.
  2. Add capsicum, carrot, rice and soy sauce and cook for 10 minutes, covered. Stir through spring onions.
  3. Serve in lettuce leaves.
