Instructions
Pre-heat a large non-stick frying pan or wok. Add oil, garlic, ginger and minces and fry until brown.
Add capsicum, carrot, rice and soy sauce and cook for 10 minutes, covered. Stir through spring onions.
Serve in lettuce leaves.
