Cupcakes are also a great activity for a rainy day. Even young children can help bake them and then you can have hours of fun decorating.

Easy Vanilla Cupcake Recipe

Basic Cupcake Recipe

A basic cupcake recipe is incredibly versatile - you can decorate them; colour them; add flavours... really, amazing cupcakes are only limited by your imagination.

Ingredients

  • 150 g butter softened
  • 1 1/2 cups Caster Sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 2 1/2 cups self-raising flour
  • 1 1/4 cups milk

Instructions

  1. Preheat oven to 190°C. Beat butter with an electric mixer until smooth, add sugar and beat until light and fluffy.  

  2. Add eggs and mix well.

  3. Add the sifted flour, milk and vanilla, beat until smooth.

  4. Pour mixture into cupcake trays until the they are about 2/3 full. Bake for 20 minutes until golden or until they spring back when lightly pressed. Turn out onto a wire rack to cool.

You can also flavour these cupcakes if you'd like to. You might like to try:

  1. Adding the juice and rind of a lemon or orange into the mix
  2. Adding 1/4 cup of cocoa to make chocolate cupcakes (you'll also need to add a little more milk)
  3. Putting one spoonful of mix into the tray, then add a teaspoon of jam before adding another spoonful of mix

Recipe Notes

This recipe will make around 24 cupcakes so you may need to bake in two batches or halve the mixture.
