I don’t know about you, but when I think about Easter, I think about eggs. Mostly often, it’s chocolate eggs but don’t forget traditional eggs, too! This recipe is easy enough for even young children to be involved and you can adjust the seasoning for all tastes. It’s a nostalgic recipe for Easter that both kids and parents will enjoy.

Mashed eggs in a cup – with a twist

Ingredients

  • 2 eggs
  • A tablespoon of Greek yoghurt
  • Salt, pepper and curry powder for seasoning

Method

Boil the eggs until they are hard boiled – around 7-8 minutes. Leave them to cool for a few minutes or until they are cool enough to peel. Peel the eggs then mash in a cup with the yoghurt and seasonings. Easy!

So there you go – a quick and easy recipe that’s perfect for long weekends and these cooler Autumn days. We hope you and your family enjoy this and have a wonderful Easter! Check out our website for some more egg ideas.
