With just 6 ingredients you probably have in the pantry right now, you can whip these up in literally a few minutes. And they take about as long to cook! In fact, if your kids are anything like mine, they’ll probably eat them as fast as you can fry them.

Pikelets are also a great brunch snack for special occasions, such as birthdays or Mother’s Day, or just because it’s Sunday!

Easy-peasy Pikelets Recipe

Pikelets

Pikelets are a very quick and tasty evening snack.  I personally love pikelets, I make them all the time and they are perfect for little fingers to hold, or topped with a delicious raspberry or apricot jam and whipped cream.

Ingredients

  • 1 Cup Self raising flour
  • 2 Tblsp Sugar
  • 1 Egg
  • 2/3 Cup Milk
  • 1 Tbsp Butter
  • 1 tsp Vanilla essence

Instructions

  1. Heat a non-stick frypan on a medium heat.

  2. Put flour into a mixing bowl and add sugar.

  3. Mix together egg and milk and whisk into flour mixture.

  4. Add a large tablespoon of mixture for each pikelet to the heated pan. Cook for approximately 2 minutes on medium heat, until bubbles appear on the surface of the pikelet. Turn over pikelet and cook until other side is golden.

  5. Top with jam and cream.
